To watch a sushi master break down a whole fish, from nose to tail, is something of a meditation. Over one night, renowned omakase, R by Raita Noda, transforms into a live sushi bar, as Chef Raita and his son Momotoro break down a whole tuna—alongside their tuna supplier Narito Ishii of Pyrmont Seafood and chefs Toshihiki Oe (Sushi Oe) and Tori Ryu (Restaurant 16). The special evening will unfold to a soundscape by Toshiki Ohta of NTS Sacred Pools.
